Lemon Chicken

I found it!!!

Here is the lovely link for this luscious lemon chicken.

I like it for the following reasons:

1) It has a spicy kick, but it's not too spicy.
2) It's so easy to make.
3) It doesn't include instant lemon pudding mix.
4) I bet you all the ingredient are in your house right now.
5) I bet you can change the ingredient a little to make this any flavor of chicken you want.

Things I changed:

1) I didn't have lemons, so I just used lemon juice.
2) I didn't have coconut oil (but I wish I did). Instead, I used canola oil and then poured coconut milk on top as the chicken cooked.
3) I had rice vinegar, but I think you could use regular vinegar and add a little bit of sugar. Next time, I'm going to use a little less than the recipe calls for. Mine came out a little on the vinegary side. But it was still very good.

Does any one else hear that name and immediately hear Ben-Folds 5 in your head as well?

Last year Kate was 8.

That means this year Kate is 9.

That doesn't rhyme quite as well as last year's story, but I'm sure it will be a fabulous year just the same. How can it not be for a girl like KATE!

The Fairy Rebel by Lynne Reid Banks. I loved this book when I was 9. In fact, it was the only book I wanted to read.

Scissors

Between Matt and I, we have about 8 pair of scissors. (On a good day, there are no scissors between us.) We live in a 2 bedroom, 1&1/2 bath apartment.. You'd think with so many scissors and so little space, we'd always be able to find a pair. But alas, when I have something to cut out, the only scissors I find handy are my sewing scissors. That pair seems to be the most available at any given time in any given room. Good thing my mother taught me better than that, and I am morally against using sewing scissors for anything besides sewing.

I think most of them are in the kitchen . . . don't ask me why.

Birthday Boys

Today is such a special day! Tomorrow is a pretty good one too. My two nephews made it that way. Today and tomorrow these two almost twins (except they have two different sets of parents) will be 3 . . . is that right?

Lent

I don't know. Something about the name makes me think I'll get more laundry done if I do it. Maybe, we'll see. Every year my sister observes Lent, and every year I think (like one of the Windows 7 models), What a great idea. I'm going to do that. So this year I really am. Here's my plan.

For Lent, I'm going to sleep in less and take more naps. =)

Tricky, huh! I'm not trying to be tricky. I just have things to do. So I'm going to wake up with my sweet husband at 5:00 AM and do school work while my baby sleeps (and get in 10 minutes of Pilates, hopefully). Then take an afternoon nap with baby instead of trying to cram in school work. Then I'm going to enjoy my evenings instead of worrying about what is due tomorrow.

poetic musings

My thoughts upon reading one of Rudyard Kipling's less well known poems, "The Gods of the Copybook Headings" and considering the eve of taxes and certain government mandated reforms in our country:

Mr. Kipling says, ' In the Carboniferous Epoch we were promised abundance for all, / By robbing selected Peter to pay for collective Paul; / But, though we had plenty of money, there was nothing our money could buy, / And the Gods of the Copybook Headings said: "If you don't work you die." '

Well, I guess I have no original thoughts to share, just that small portion of poem. I found it more enlightening than anything I could thing to say on the point.

Osmosis

We are testing this theory. If it is correct, by the time Matt and I are done with all our schooling, Jill will have learned the equivilant of two master's degrees.
